Ema Datshi
Fresh green chilies used as the main vegetable, simmered until soft and finished with soft, melting farmer's cheese — Bhutan's national dish, and genuinely very spicy since chilies are the bulk of it, not a seasoning.

Ingredients
- 1 lb fresh green chilies, sliced into rounds (seeds left in)
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/2 cup water
- 2 tbsp butter
- 1 cup soft farmer's cheese (or a mild, meltable fresh cheese), crumbled
- Salt, to taste
- Cooked red rice, to serve
Steps
- Combine the chilies, onion, garlic, water, and butter in a pot and bring to a simmer.
- Cook for 10-12 minutes, until the chilies have softened but still hold some texture.
- Stir in the crumbled cheese and continue cooking gently, stirring, until it melts into a creamy, slightly stringy sauce.
- Season with salt and serve hot over red rice.
