Hand-grated potato pancakes fried simply, with no egg and no matzo meal — Belarus's national dish, distinct from the Ashkenazi Jewish latke it's sometimes confused with.

Ingredients
- 2 lbs potatoes, peeled
- 1 small onion
- 2 tbsp all-purpose flour
- Salt, to taste
- Oil or lard, for frying
- Sour cream, to serve
Steps
- Hand-grate the potatoes and onion together on a fine grater, keeping some of the starchy liquid.
- Stir in the flour and salt.
- Heat a generous layer of oil or lard in a skillet over medium-high heat.
- Spoon portions of the batter into the pan, flattening into thin rounds, and fry for 3-4 minutes per side until deep golden and crisp at the edges.
- Drain briefly on paper towels and serve hot with sour cream.
