Butter Tarts
Canada's beloved gooey-centered tart: a flaky shell filled with a caramelized butter, brown sugar, and raisin filling.

Ingredients
- Pastry for 12 tart shells
- 1/2 cup raisins
- 1/2 cup butter, melted
- 3/4 cup brown sugar
- 1/2 cup corn syrup
- 2 eggs
- 1 tsp vanilla extract
- Pinch of salt
Steps
- Soak raisins in warm water for 15 minutes, then drain well.
- Line a muffin tin with pastry, pressing into 12 tart shells.
- Scatter a small handful of raisins into the bottom of each shell.
- Whisk together melted butter, brown sugar, corn syrup, eggs, vanilla, and salt until smooth.
- Pour the filling into the shells, filling each about two-thirds full.
- Bake at 220C (425F) for 12-15 minutes until the pastry is golden and the filling is bubbling but not set completely in the center.
- Cool in the tin a few minutes before removing; the filling firms up as it cools.
