Reganmian (Hot Dry Noodles)
Alkaline noodles par-boiled, oiled, and air-dried, then tossed with unsweetened roasted sesame paste and chili oil — Wuhan's signature breakfast noodle, served dry rather than in soup, unlike dan dan mian or zhajiangmian.

Ingredients
- 1 lb fresh alkaline (jianshui) noodles
- 3 tbsp roasted sesame paste
- 1 tbsp sesame oil
- 2 tbsp light soy sauce
- 1 tbsp black vinegar
- 1 tbsp chili oil
- 2 tbsp pickled radish, chopped
- 2 tbsp chopped garlic chives
- 2 cloves garlic, minced
Steps
- Boil the noodles for 1-2 minutes until just cooked but firm, then drain immediately.
- Toss the hot noodles with a little oil and spread on a tray to air-dry and cool for a few minutes, tossing occasionally to prevent sticking.
- Whisk the sesame paste with the sesame oil, soy sauce, and black vinegar into a smooth, pourable sauce.
- Briefly reheat the dried noodles in boiling water for a few seconds, then drain well.
- Toss the noodles immediately with the sesame sauce until evenly coated.
- Top with chili oil, pickled radish, garlic chives, and minced garlic, and serve right away.
