Jianbing
A thin mung bean and wheat flour crepe spread with egg, folded around a crispy fried cracker called baocui — most home recipes skip the mung bean flour and the cracker entirely, losing the real texture and flavor.

Ingredients
- 1 cup mung bean flour
- 1/2 cup all-purpose flour
- 1 1/2 cups water
- 4 eggs
- 4 scallions, chopped
- 1/4 cup cilantro, chopped
- 3 tbsp hoisin sauce
- 2 tbsp chili paste
- 4 baocui crackers (or thin fried wonton crisps)
- Oil, for the griddle
Steps
- Whisk the mung bean flour, all-purpose flour, and water into a thin, smooth batter.
- Heat a lightly oiled griddle and pour a ladle of batter, spreading it thin into a large circle.
- Crack an egg over the crepe and spread it evenly with the back of a spoon.
- Once the egg is nearly set, flip the whole crepe over.
- Brush with hoisin sauce and chili paste, and sprinkle with scallions and cilantro.
- Lay a baocui cracker across the center, then fold the crepe over it from both sides and roll up.
- Slice in half and serve immediately.
