Kalakukko
A rye-crusted fish pie from Finland's Savonia region, especially Kuopio, first documented in 1792 when a district doctor described it to royal colleagues as a fat-and-fish pastry in a dough crust — originally a portable meal for fishermen and forest workers, designed to keep for days without refrigeration. Southern Savonia insists on vendace as the only true filling, while northern Savonia argues for perch, a real regional disagreement worth keeping alive. The thick rye crust seals in moisture during a very long, low bake — traditionally many hours, sometimes overnight — which is what fully softens the fish bones; shortcutting the bake time is the main way modern versions go wrong.

Ingredients
- 400g rye flour
- 150g wheat flour
- 250ml water
- 1 tsp salt
- 800g small whole fish (vendace, or substitute smelt or sardines)
- 150g salt pork or bacon, diced
- Salt and pepper
Steps
- Mix the rye and wheat flour with water and salt into a stiff dough. Roll into a disc.
- Layer the cleaned fish and salt pork in the center, seasoning with salt and pepper.
- Fold the dough up and over to fully enclose the filling, sealing the edges well.
- Bake at 150°C (300°F) for several hours, until the crust is deep brown and the fish bones have softened.
- Wrap and rest before slicing.
