Yorkshire Pudding
A savory baked batter puff, classically served with roast beef — the rise depends entirely on pouring cold, rested batter into screaming-hot fat.

Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 2 eggs
- 1/2 tsp salt
- Vegetable oil or beef drippings, for the tin
Steps
- Blend the flour, milk, eggs, and salt together until smooth and lump-free — the batter should be the consistency of thin cream.
- Cover and refrigerate the batter for at least 1 hour, ideally overnight.
- Preheat the oven to 425°F (220°C). Place about a teaspoon of oil or beef drippings into each cup of a muffin tin, and put the tin in the oven for 10-15 minutes, until the fat is smoking hot.
- Working quickly, pour the cold batter into each cup, filling about three-quarters full.
- Bake for 20-25 minutes without opening the oven door — even a brief blast of cool air can collapse the rise.
- Serve immediately, puffed and golden, alongside roast beef and gravy.
