Very ripe, black-spotted plantain marinated in ginger and chili before frying, not just dusted with spice afterward — a beloved Ghanaian night-market street food.

Ingredients
- 4 very ripe plantains, peeled and diced
- 2 tbsp fresh ginger, grated
- 1-2 tsp cayenne pepper or ground chili, to taste
- 1/2 tsp ground cloves
- 1/4 tsp ground nutmeg
- Salt, to taste
- Oil, for frying
- Roasted peanuts, to serve (optional)
Steps
- Mix the grated ginger, cayenne, cloves, nutmeg, and salt with a splash of water into a thick marinade.
- Toss the diced plantain in the marinade, making sure every piece is well coated, and let sit for 15 minutes.
- Heat oil for deep-frying in a pan.
- Fry the marinated plantain in batches until deep golden and caramelized at the edges, about 3-4 minutes per batch.
- Drain briefly and serve hot, with roasted peanuts on the side if desired.
