The Gambia's national dish, a rich peanut stew built on the same groundnut-paste tradition as Senegal's closely related mafé — both countries genuinely share this West African peanut-stew heritage under different names. Meat (often beef or chicken) is simmered with tomato, onion, and sweet potato until the peanut butter melts into a thick, deeply savory sauce; the natural sweetness of the sweet potato balancing the peanut richness is a real, deliberate part of the dish, not an afterthought.

Ingredients
- 800g beef or chicken, cubed
- 1 cup smooth unsweetened peanut butter
- 2 tomatoes, chopped
- 2 tbsp tomato paste
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 sweet potatoes, cubed
- 1 Scotch bonnet chile (whole, for mild heat)
- 1 bay leaf
- Oil, salt
- Rice, to serve
Steps
- Brown the meat in oil with the onion and garlic.
- Stir in the tomato, tomato paste, and bay leaf, and cook a few minutes.
- Add enough water to cover, along with the whole Scotch bonnet, and simmer until the meat is nearly tender.
- Stir in the peanut butter until it dissolves into the sauce.
- Add the sweet potato and simmer until both the meat and sweet potato are tender and the sauce has thickened.
- Remove the whole chile before serving, and serve over rice.
