Tzatziki
A cooling cucumber and strained-yogurt sauce — thoroughly draining the grated cucumber is the one step that keeps it thick instead of watery.

Ingredients
- 2 cups full-fat Greek yogurt (strained)
- 1 cucumber, grated
- 1/2 tsp salt (for the cucumber)
- 2-3 cloves garlic, minced or grated
- 2 tbsp olive oil, plus more to serve
- 1 tbsp lemon juice or white vinegar
- 1 tbsp fresh dill or mint, chopped (optional)
- Salt, to taste
Steps
- Toss the grated cucumber with the 1/2 tsp salt and let it sit in a colander for 15-20 minutes to release its water.
- Wrap the salted cucumber in a clean towel or cheesecloth and squeeze firmly to remove as much liquid as possible.
- Combine the strained yogurt, drained cucumber, garlic, olive oil, and lemon juice in a bowl.
- Stir in dill or mint if using, and season with salt to taste.
- Cover and refrigerate for at least 1 hour, ideally several, to let the flavors meld.
- Drizzle with olive oil just before serving, alongside pita, grilled meats, or vegetables.
