Honduras' favorite street-food fold: a thick flour tortilla with refried beans, crema, and crumbled cheese.

Ingredients
- 2 cups flour, 1 tsp baking powder, 1/2 tsp salt (for tortillas)
- 2 tbsp lard or oil, 3/4 cup warm water
- 1 cup refried red beans
- 1/2 cup Honduran crema (or sour cream)
- 1 cup crumbled queso duro (or feta)
- 2 eggs, scrambled (optional)
- 1 avocado, sliced (optional)
Steps
- Mix flour, baking powder, salt, and lard into a crumbly mixture, then knead in warm water until a smooth, soft dough forms; rest 15 minutes.
- Divide into balls, roll out into thick flour tortillas, and cook on a dry hot griddle until lightly browned with a few puffed spots, about 1-2 minutes per side.
- Spread each warm tortilla with refried beans, drizzle with crema, and scatter with crumbled cheese.
- Add scrambled egg and avocado if using, then fold in half.
- Serve warm.
