Colcannon
Floury mashed potatoes folded with cabbage or kale and scallions, served with a well of melted butter in the center — traditionally eaten at Halloween, sometimes with charms hidden inside for fortune-telling.

Ingredients
- 3 lbs floury potatoes, peeled and quartered
- 1/2 cup milk
- 4 tbsp butter, plus more for serving
- 1/2 head cabbage or a bunch of kale, shredded
- 4 scallions, chopped
- Salt and pepper, to taste
Steps
- Boil the potatoes until very tender, then drain and mash with the milk and butter until smooth.
- Meanwhile, boil or steam the cabbage or kale until tender, then drain well and chop finely.
- Fold the cooked cabbage or kale and scallions into the mashed potatoes.
- Season with salt and pepper.
- Spoon into bowls, make a well in the center of each serving, and add a generous pat of butter to melt into the well.
