Irish Soda Bread
Just flour, buttermilk, baking soda, and salt — purists insist anything more (raisins, sugar, caraway) turns it into a tea cake, not the everyday bread it actually is.

Ingredients
- 4 cups whole-wheat or stone-ground flour
- 1 tsp baking soda
- 1 tsp salt
- 1 3/4 cups buttermilk
Steps
- Whisk the flour, baking soda, and salt together in a large bowl.
- Make a well in the center and pour in the buttermilk, mixing quickly with your hands until it just comes together into a soft, slightly sticky dough. Don't overwork it.
- Turn the dough out onto a floured surface and shape into a round loaf.
- Place on a floured baking sheet and cut a deep cross into the top to help it bake through evenly.
- Bake at 425F for 30-35 minutes, until the loaf sounds hollow when tapped on the bottom.
- Let cool slightly before slicing.
