Panna Cotta
"Cooked cream" set with just enough gelatin to hold its shape when unmolded — silky, barely sweet, and simple enough that quality cream and vanilla do all the work.

Ingredients
- 2 cups heavy cream
- 1/2 cup whole milk
- 1/3 cup sugar
- 1 vanilla bean (or 1 tbsp vanilla extract)
- 2 1/2 tsp powdered gelatin (or 4 gelatin sheets)
- 3 tbsp cold water (if using powdered gelatin)
- Berries or fruit compote, to serve
Steps
- If using powdered gelatin, sprinkle it over the cold water and let it bloom for 5-10 minutes. If using sheets, soak them in a bowl of cold water for 10 minutes, then squeeze out excess water.
- Warm the cream, milk, sugar, and vanilla (scraped seeds and pod, if using a bean) together in a saucepan over medium heat, stirring until the sugar dissolves. Do not let it boil.
- Remove from heat and whisk in the bloomed gelatin until fully dissolved and smooth. Remove the vanilla pod if used.
- Pour the mixture into ramekins or serving glasses.
- Refrigerate for at least 4 hours, until fully set.
- To serve unmolded, briefly dip the outside of each ramekin in warm water, then run a knife around the edge and invert onto a plate. Top with berries or fruit compote.
