A slightly sweet cornmeal-and-flour dough, shaped into tapered logs and fried until crisp, distinct from plain Jamaican fried dumpling or johnny cake, which use only flour with no cornmeal or sugar. Its sweetness and elongated shape are what set it apart, always paired with fried fish or jerk.

Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg, or vanilla extract
- 3/4 cup coconut milk (or milk)
Steps
- Mix the dry ingredients together.
- Gradually add the liquid, mixing to a soft, slightly sticky dough, without overmixing.
- Rest 10-15 minutes.
- Divide and roll into small, 3-4 inch logs with tapered ends.
- Fry in 350F/175C oil, turning, 6-8 minutes until deep golden and cooked through.
- Drain and serve hot with fried fish or jerk.
