Zaru Soba
Cold buckwheat noodles rinsed and rubbed under running water to strip surface starch, served on a bamboo tray with a cold dipping sauce — dip small bites rather than pouring the sauce over the noodles.

Ingredients
- 1 lb dried soba noodles
- 1 cup dashi
- 1/4 cup soy sauce
- 1/4 cup mirin
- Grated wasabi, to serve
- Sliced scallions, to serve
- Shredded nori, to serve
Steps
- Simmer the dashi, soy sauce, and mirin together for a few minutes to cook off the raw alcohol, then chill completely.
- Boil the soba noodles according to package instructions until just tender.
- Drain and immediately rinse under cold running water, rubbing gently to remove surface starch until the noodles feel clean and slightly springy.
- Pile the chilled noodles onto a bamboo tray or plate.
- Serve with the cold dipping sauce, wasabi, scallions, and nori on the side.
- Dip small bites of noodle into the sauce rather than pouring it over the top.
