Ingredients
- 200g sweet potato glass noodles (dangmyeon)
- 150g beef, thinly sliced (optional)
- 1 carrot, julienned
- 1 onion, sliced
- 100g spinach, blanched
- 4 shiitake mushrooms, sliced
- 3 tbsp soy sauce
- 2 tbsp sugar
- 1 tbsp sesame oil, plus more for finishing
- 2 cloves garlic, minced
- Sesame seeds, to garnish
Steps
- Soak noodles in warm water until pliable, then boil 5-6 minutes until tender; drain, cut into shorter lengths, and toss with 2 tsp sesame oil, 1 tsp soy sauce, and 1 tsp sugar while still warm.
- Marinate beef and sliced shiitake together briefly in soy sauce, a little sugar, garlic, and sesame oil, then stir-fry until browned; set aside.
- Stir-fry carrot and onion separately, each with just a pinch of salt, until just tender. Season blanched spinach separately with a little sesame oil, salt, and minced garlic.
- In a large bowl or wok, combine seasoned noodles, beef and mushrooms, all vegetables, and spinach.
- Add a final seasoning of soy sauce, sugar, garlic, and sesame oil, tossing well over medium heat until evenly coated and glossy.
- Finish with a drizzle of sesame oil and a sprinkle of sesame seeds.
