Lahpet (Tea Leaf Salad)
Fermented tea leaves tossed with crispy fried garlic, dried shrimp, sesame, and tomato — a royal-era Burmese dish once used as a peace offering between kingdoms, built on genuinely fermented tea, not just brewed leaves.

Ingredients
- 1/2 cup fermented tea leaves (lahpet)
- 2 tbsp fried garlic
- 2 tbsp fried split peas
- 2 tbsp roasted peanuts
- 1 tbsp toasted sesame seeds
- 2 tbsp dried shrimp
- 1 tomato, diced
- 1/4 head cabbage, shredded
- 2 tbsp fish sauce
- Juice of 1 lime
- 1 green chili, sliced
Steps
- If the fermented tea leaves are very salty or bitter, rinse briefly and squeeze out excess liquid.
- In a large bowl, combine the tea leaves with the fried garlic, fried split peas, roasted peanuts, sesame seeds, and dried shrimp.
- Add the diced tomato and shredded cabbage.
- Dress with the fish sauce and lime juice, and toss everything together well.
- Top with sliced green chili and serve immediately.
