Yellow potato kneaded with lime juice and aji amarillo until smooth and pliable, layered cold around a tuna or chicken filling — served as a terrine, not a hot mashed-potato dish, with the aji amarillo essential, never optional.

Ingredients
- 3 lbs yellow potatoes, boiled and riced
- 1/4 cup aji amarillo paste
- Juice of 3 limes
- 1/4 cup oil
- Salt and pepper, to taste
- 2 cans tuna, drained
- 1/2 cup mayonnaise
- 1 avocado, sliced
- Hard-boiled eggs and olives, to garnish
Steps
- Knead the riced potatoes with the aji amarillo paste, lime juice, oil, salt, and pepper until smooth, pliable, and well seasoned.
- Mix the tuna with the mayonnaise.
- Press a layer of the potato mixture into a mold or loaf pan.
- Spread the tuna filling over the potato layer, then top with avocado slices.
- Press another layer of potato on top, smoothing it flat.
- Chill for at least 1 hour, then unmold and garnish with hard-boiled egg and olives before serving cold.
