Eggs scrambled directly into sauteed green peppers and tomatoes — a Turkish breakfast named for the town near Izmir where it originated, distinct from shakshuka in that the eggs are folded in, not poached whole.

Ingredients
- 2 tbsp olive oil
- 2 mild green peppers (Turkish sivri biber or Anaheim), chopped
- 1 small onion, chopped
- 3 ripe tomatoes, diced
- 1/2 tsp red pepper flakes (optional)
- 4 eggs
- Salt and black pepper, to taste
- Crusty bread, to serve
Steps
- Heat the olive oil in a skillet and saute the green peppers and onion until softened, about 5 minutes.
- Add the tomatoes and red pepper flakes, and cook down for 8-10 minutes until the mixture is thick and most of the liquid has evaporated.
- Crack the eggs directly into the pan and season with salt and pepper.
- Gently stir and fold the eggs into the tomato mixture over low heat until just set and creamy, not fully firm.
- Serve immediately with crusty bread for scooping.
