Katogo
A Ugandan one-pot dish, genuinely distinct from the site's existing plain Matoke: matoke on its own is steamed or mashed green banana served as a side, while katogo cooks the green banana or cassava directly in a savory sauce, with beef, offal, beans, or groundnut sauce, until it absorbs the flavor and softens into the dish itself rather than sitting alongside a separate stew. It's commonly eaten as a hearty breakfast or brunch, unlike plain matoke, which functions more as an anytime staple side.

Ingredients
- 8 green bananas (matoke), peeled and chopped
- 400g beef or offal, cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 cups beef broth
- Oil
Steps
- Brown the beef or offal in oil, then set aside.
- Cook the onion, garlic, and ginger until softened, then add the tomatoes and cook down.
- Return the meat to the pot along with the broth.
- Add the green bananas, cover, and simmer 30-40 minutes until the bananas are soft and have absorbed the sauce.
- Mash lightly and serve hot.
