Buffalo Wings
Buffalo, New York's original bar snack: deep-fried wings tossed in a simple, tangy cayenne-butter sauce, invented at the Anchor Bar in 1964.

Ingredients
- 1kg chicken wings, split into flats and drumettes
- 1 cup cayenne pepper hot sauce (such as Frank's RedHot)
- 1/2 cup butter, melted
- 1 tbsp Worcestershire sauce
- 1/2 tsp garlic powder
- Oil, for frying
- Celery sticks and blue cheese dressing, to serve
Steps
- Heat oil to 200C (400F).
- Fry the wings in batches until deep golden and cooked through, 10-12 minutes; drain.
- Whisk together hot sauce, melted butter, Worcestershire sauce, and garlic powder until smooth.
- Toss the hot fried wings in the sauce until fully coated.
- Serve immediately with celery sticks and blue cheese dressing.
