Ingredients
- 2 cups tapioca starch
- 1.5 cups boiling water
- 300g shrimp, peeled
- 150g pork belly, sliced thin
- Banana leaves (optional, for wrapped version)
- Fried shallots, to garnish
- Fish sauce dipping sauce, to serve
Steps
- Pour the boiling water into the tapioca starch, stirring quickly, then knead into a smooth, translucent, elastic dough while still warm.
- Pinch off small pieces and flatten into discs.
- Place a piece of shrimp and pork belly in the center of each and fold closed.
- Either wrap in banana leaf and steam for 10 minutes, or boil bare for 8 minutes and shock immediately in ice water.
- Garnish with fried shallots and serve with fish sauce dipping sauce.
