Sadza with Relish
White maize meal beaten in stages into a stiff, smooth mound, served with a vegetable or meat relish — Zimbabwe's staple, and a close sibling of the site's own Kenyan ugali, part of the same maize-meal family found across East and Southern Africa under different names.

Ingredients
- 3 cups white maize meal
- 4 cups water, divided
- 1 lb beef, cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 bunch collard greens or rape, chopped
- 2 tbsp oil
- Salt, to taste
Steps
- Bring half the water to a boil and stir in about a third of the maize meal to make a thin porridge.
- Gradually beat in the remaining maize meal with a sturdy wooden stick, adding the rest of the water as needed, stirring constantly for 10-15 minutes until stiff and smooth.
- Meanwhile, heat the oil and brown the beef with the onion.
- Add the tomatoes and a splash of water, and simmer until the beef is tender and the sauce thickens.
- In a separate pot, briefly boil the greens until just tender, then drain.
- Turn the sadza out onto a plate and serve alongside the beef relish and greens.
