Spices Die Fastest Above the Stove
The cabinet right above the stove is the single worst place to store spices — heat, light, and humidity all speed up the breakdown of the aromatic oils that give spices their flavor. Keep them in a cool, dark, dry cabinet instead. Whole spices (peppercorns, cumin seed, cinnamon sticks) hold their potency for 2-4 years; already-ground spices fade in about 6 months to a year, so buy whole and grind as needed if you cook with spices often.
