Masala Chai
Black tea simmered directly with milk and freshly crushed ginger, cardamom, cinnamon, and cloves — real chai is boiled together, not a tea bag dunked in warm milk.

Ingredients
- 2 cups water
- 2 cups whole milk
- 3 tbsp loose black tea (Assam), or 4 tea bags
- 1-inch piece fresh ginger, crushed
- 4 green cardamom pods, crushed
- 1 cinnamon stick
- 4 whole cloves
- Sugar, to taste
Steps
- Combine the water, ginger, cardamom, cinnamon, and cloves in a saucepan and bring to a boil. Simmer for 5 minutes to release the spice flavors.
- Add the black tea and simmer for another 2-3 minutes.
- Pour in the milk and bring back to a gentle boil, watching closely so it doesn't overflow.
- Simmer for 3-4 minutes until the chai is deep amber-brown.
- Add sugar to taste, strain into cups, and serve hot.
