Paneer Tikka
Firm paneer and bell pepper skewers marinated in spiced yogurt and charred hot and fast — a Mughal-era vegetarian answer to meat kebabs, built to take on real char, not just a light pan-fry.

Ingredients
- 1 lb paneer, cut into cubes
- 1 bell pepper, cut into chunks
- 1 onion, cut into chunks
- 1/2 cup thick yogurt
- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/2 tsp ajwain (carom seeds)
- 1 tbsp mustard oil
- Salt, to taste
- Lemon wedges, to serve
Steps
- Whisk the yogurt with the ginger-garlic paste, chili powder, garam masala, turmeric, ajwain, mustard oil, and salt into a thick marinade.
- Add the paneer, bell pepper, and onion to the marinade and toss gently to coat. Marinate at least 30 minutes.
- Thread the paneer and vegetables onto skewers.
- Grill or broil on very high heat, turning occasionally, until charred in spots on all sides, about 8-10 minutes.
- Squeeze fresh lemon over the top and serve hot.
