Rolex
Uganda's iconic street food, emerging in the 1990s and most likely invented by a chapati seller in Jinja or the Busoga region, before exploding in popularity at Wandegeya, the student hub beside Makerere University in Kampala. The name is genuine Ugandan wordplay for 'rolled eggs' (chapati rolled around a fried egg), with no connection to the watch brand. Real rolex uses fresh, hand-rolled chapati, never a store-bought wrap, and the chapati is pressed directly onto the still-wet egg-and-vegetable omelette in the pan so the two fuse together before rolling, rather than being assembled cold afterward.

Ingredients
- 1 cup flour
- A pinch of salt
- Water
- 1 tsp oil, plus more for frying
- 2 eggs
- 1/4 cabbage, shredded
- 1 small tomato, diced
- 1/2 onion, diced
- Salt and pepper
Steps
- Knead the flour, salt, water, and oil into a soft dough. Rest 15 minutes.
- Roll the dough thin and pan-fry on a dry or lightly oiled skillet until golden and pliable.
- Whisk the eggs with the shredded cabbage, tomato, onion, salt, and pepper.
- Pour the egg-vegetable mixture onto a hot oiled pan, then place the warm chapati on top of the still-wet omelette so they fuse together, and cook 1-2 minutes.
- Flip the whole stack briefly, then roll tightly into a cylinder.
- Slice in half and serve hot.
