Chocolate Chip Cookies

Ingredients
- 1 cup unsalted butter
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 2 cups chocolate chips or chopped chocolate
- Flaky salt, for topping (optional)
Steps
- Melt the butter in a light-colored pan over medium heat, swirling often, until it foams, then turns golden-brown with a nutty aroma and toasted milk solids at the bottom. Remove from heat and let cool slightly.
- Whisk the browned butter with the brown sugar and granulated sugar until smooth, then whisk in the eggs and vanilla.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Fold the dry ingredients into the wet mixture just until combined, then fold in the chocolate chips.
- Cover and refrigerate the dough for at least 2 hours, ideally overnight, to deepen the flavor and firm the fat.
- Scoop the chilled dough into balls and roll smooth, then place on a lined baking sheet, spaced apart.
- Bake at 350°F (175°C) for 10-12 minutes, until the edges are golden but the centers still look slightly underdone.
- Sprinkle with flaky salt if desired and let cool on the sheet for a few minutes before transferring.
