Buttermilk Pancakes
Thick, fluffy breakfast pancakes leavened with buttermilk and baking soda — gently mixed so a few lumps remain.

Ingredients
- 2 cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 cups buttermilk
- 2 eggs
- 1 tsp vanilla extract
- 4 tbsp butter, melted, plus more for the pan
- Maple syrup, to serve
Steps
- Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl.
- In a separate bowl, whisk together the buttermilk, eggs, and vanilla, then drizzle in the melted butter while whisking.
- Pour the wet ingredients into the dry and fold gently just until combined — a few small lumps are fine; do not overmix.
- Let the batter rest for 5-10 minutes.
- Heat a griddle or skillet over medium-low heat and butter it lightly. Pour 1/4-cup portions of batter onto the griddle.
- Cook until bubbles rise to the surface and start to pop, leaving small holes, then flip and cook the other side until golden.
- Serve warm with maple syrup and butter.
